Head Chef, Liam Woodward
Liam Woodward is the Head Chef at the Holiday Inn in Nottingham. Originally born in Brighton and raised in Derbyshire, he brings a wealth of experience and a deep passion for culinary excellence to his role.
His career began with classical French training in the Royal Navy, where he served for 10 years. Following a brief period in London, Liam became Head Chef in his hometown. He went on to work with Jamie Oliver for three years and later held the position of Head Chef at the Theatre Royal Nottingham.
Since joining the Holiday Inn Nottingham in 2017, Liam has taken the lead in creating and developing the hotel’s menus. With a strong corporate clientele, the menu is highly bespoke and places a strong emphasis on fresh, locally sourced ingredients. He has worked closely with Owen Taylor, an award-winning butcher, for over 20 years. Together, they offer popular weekly changing pies and high-quality Sunday meats. Liam also sources from other local gems such as the Nottingham Cheese Shop and proudly features Nottingham Gin, crafted nearby from Rudy’s Fine Gin.
Liam is passionate about using the best products available. His latest creation, the Sunday Roast menu, showcases this dedication. Open to both guests and the public, the roast has earned praise and was recently featured in Nottingham Live. His version of the classic roast includes a unique twist—and unlimited gravy. Notably, he serves a rare Nottingham Pudding, revived from a 200-year-old recipe, which is not found elsewhere in the city.
Always keen to connect with guests, Liam invites diners to stop by the kitchen and say hello during their visit.
